Cumin Chicken Pitas

  • 1 1/2 cups shredded skinless rotisserie chicken
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons cumin seeds
  • 4 tsp minced garlic
  • 1 tbsp cup fresh lemon juice
  • 2 (6-inch) whole wheat pitas
  • 1 cup shredded red cabbage
  • ½ cup halved cherry tomatoes
  • 1/2 cup diced cucumber
  • 6 oz plain non fat yogurt
  • (fresh mint or dill is optional)

Heat olive oil in a small skillet over medium heat. Add cumin and 3 tsp garlic; cook 1 minute or until toasted, stirring frequently. Add chicken and lemon juice and sit until warm.  Heat pitas in skillet on medium for 30 seconds on each side.

Mix yogurt, cucumber, dry or fresh herbs and 1 tsp minced garlic.

Spoon chicken, yogurt sauce, cabbage and tomatoes on the pita and roll.
