Southwest Black Bean Salad
- 2 cans drained and rinsed black beans
- 1 cup fresh or frozen corn
- One diced red bell pepper
- ½ cup cilantro leaves
- 1/3 cup diced red onion
- 1 diced garlic clove
- ½ teaspoon cumin
- Juice of one fresh lime
- 1/3 cup balsamic vinaigrette
Mix everything together. Chill and serve. Garnish with additional cilantro
