Thai Noodle Salad
Ingredients
- 1 lb whole wheat noodles
- 1 red pepper thinly sliced
- 3 scallions thinly sliced
- 1 bag pre-shredded carrots or three carrots julienne
- 1 cup shredded red cabbage
- 1 cup frozen shelled edamame
- 3/4 cup peanuts or sesame seeds
- ½ cup fresh cilantro leaves
*use any combination of fresh vegetables you like
Dressing
- Juice of one large lime or two smaller
- 1 tsp of minced fresh ginger
- 2-3 Tbsp of pre-minced garlic
- 3 Tbsp of Thai sweet chili sauce (can be found in asian aisle of grocery store, but less expensive in asian markets)
- 1 Tbsp of sesame oil
- ¼ cup soy sauce
- Mix in a small bowl
Directions
- Boil and drain pasta, cook pasta al dente because it will later absorb some of the dressing
- Add half of dressing
- Add all the vegetables and peanuts and toss
- Add remaining dressing before serving
- Garnish with cilantro leaves
