Thai Noodle Salad

Ingredients

  • 1 lb whole wheat noodles
  • 1 red pepper thinly sliced
  • 3 scallions thinly sliced
  • 1 bag pre-shredded carrots or three carrots julienne
  • 1 cup shredded red cabbage
  • 1 cup frozen shelled edamame
  • 3/4 cup peanuts or sesame seeds
  • ½ cup fresh cilantro leaves

*use any combination of fresh vegetables you like

Dressing

  1. Juice of one large lime or two smaller
  2. 1 tsp of minced fresh ginger
  3. 2-3 Tbsp of pre-minced garlic
  4. 3 Tbsp of Thai sweet chili sauce (can be found in asian aisle of grocery store, but less expensive in asian markets)
  5. 1 Tbsp of sesame oil
  6. ¼ cup soy sauce
  7. Mix in a small bowl

Directions

  1. Boil and drain pasta, cook pasta al dente because it will later absorb some of the dressing
  2. Add half of dressing
  3. Add all the vegetables and peanuts and toss
  4. Add remaining dressing before serving
  5. Garnish with cilantro leaves
