Brief Summary

1. To determine whether buccal mucosa biopsies may differentiate patients suffering from food antigen mediated gastrointestinal inflammation from normal controls.

2. To determine whether, in those patients in whom the causative food antigen is known, administration of such known antigen to the buccal mucosal will illicit mucosal changes as compared to non-food antigens

Inclusion Criteria

PArticipants for the study will consist of the following

Part One : Differentiation of the mucosa

1. We will recruit normal controls without known celiac, EGID or other intestinal inflammation.

2. We will recruit celiac patients who have either not started a strict gluten free diet (GFD)  or have started a diet but have not demonstrated improvement in serologies or histology

3. EGID patients who have not had resolution of disease with a food elimination diet

Part Two: Validation

Patients with known triggers of disease (generalized known triggers such as gluten or wheat or milk, etc) will be eligible to enroll

Exclusion Criteria

1. Bleeding diathesis

2. Immunosuppression either innately (low IgG, etc) or iatrogenically with steroids or immunosuppressants.

3. History of anphylaxis of unclear cause
