Potatoes with Sesame Seeds

Sesame seeds give flavor to this potato dish without having to add a lot of salt. Also, sesame seeds are rich in copper, iron and magnesium.

Ingredients

  • 1 lb potatoes (about 8 medium)
  • 5 Tbsp olive oil
  • 2 tsp ground cumin
  • 2 tsp ground mustard seeds
  • 2 Tbsp sesame seeds
  • Salt
  • 1/3–1/2 tsp cayenne pepper
  • 1 Tbsp lemon juice

Directions

  1. Boil the potatoes. Drain and cool them for 3–4 hours. Peel the potatoes and dice them into ¾-inch cubes.
  2. Put the oil in a large (10–12 inch) frying pan and set over medium heat. When the oil is hot, put in the cumin, mustard, and sesame seeds. As soon as the seeds begin to pop, put in the diced potatoes. Stir and fry the potatoes for about 5 minutes.
  3. Add the salt, cayenne, and lemon juice. Stir and fry for another 3–4 minutes.
