Cooking with PEAU – Pipikaula (Hawaiian Dried Beef Snack)

For the next eight months we are hosting a new online cooking demo series as part of the virtual Be Well Utah event series. This year we have partnered with PEAU (Pasifika Enriching Arts of Utah). PEAU is the arts and culture division of PIK2AR (Pacific Islander Knowledge 2 Action Resources). 

Cooking with PEAU is as a collaborative effort with Be Well Utah and University of Utah Health to accomplish two goals:

  1. to teach people how to cook “traditional” Pacific Island dishes.
  2. to provide healthier options for some of the ingredients in recipes frequently used by Pacific Islanders. 

Participate in our online cooking demos and learn how cook traditional Pacific Island dishes. Not only will you learn how to cook some of these recipes, but you will also learn healthier options for some of the ingredients in these recipes. Each month we will provide a recipe for both a traditional main dish along with a side dish or dessert.

Sometimes you just need a quick snack to get you through the afternoon. Today we’re going to show you how to make a traditional Hawaiian snack of choice, Dried Beef. It is a great low calorie snack with lots of protein. A great way to get fill you up.

Ingredients

SERVES 16 (SERVING SIZE=1 OUNCE/4 PIECES)

  • 4 lbs. Flank Steak, Brisket, Chuck Steak or Short Ribs
  • 1/ 3 Cup Red Hawaiian Salt or Rock Salt
  • 1/ 4 Cup Water
  • 1/ 2 Cup Soy Sauce
  • 2 Tbsp Brown Sugar
  • 2 Cloves Garlic, minced
  • 1Tbsp Vegetable Oil

Directions

  1. Slice meat across the grain. Make slices 1/ 4" thick and 6- 8" long.
  2. Sprinkle with salt and drizzle with water and let stand for 60 minutes.
  3. Mix soy sauce, brown sugar, garlic and vegetable oil in a small bowl. Marinate Meat for overnight.
  4. Lay meat slices on a rack, over a baking pain. Dry the meat under the hot sun for one day, turning occasionally. You can also bake the meat in an oven at 125 degrees for 8 hours to gain the same result.
  5. Brown meat over charcoal or fry in a pan to serve it hot. Also delicious if served cold. Enjoy!
