This bright, healthy salad features berries and dark green leafy vegetables—two foods that fight cancer, according to the American Institute for Cancer Research.
Spinach Salad with Raspberry Vinaigrette
Serves 4-6
- 10-oz. bag fresh spinach
- 1/4 c. Raspberry Vinaigrette (see recipe below)
- 1 pt. strawberries, halved
- 11-oz. can mandarin oranges, drained
- 2 tbsp. sliced almonds
Toss spinach with Raspberry Vinaigrette and place in a salad bowl. Toss strawberries and oranges with spinach. Top with almonds. Serve immediately.
Raspberry Vinaigrette
- 3/4 c. canola oil
- 1 tsp. minced garlic
- 1/3 to 1/2 c. raspberry vinegar
- 1/4 tsp. salt
- 1/2 tsp. minced onion
- 1/4 tsp. black pepper
Whisk together all ingredients. Refrigerate leftover dressing.
