Asian Fried Chicken

Chef Pomaikai Gaui from Taro Patch Catering shares a recipe from the island of Kauai that is special and dear to his heart. Mochiko chicken, also known as oriental fried chicken, has been passed down for generations across the islands. The protein in this recipe can be substituted on the lightly breaded dish with either pork or tofu, combined with a sweet and savory sauce to warm your heart and stomach.

Cooking with PEAU (Pasifika Enriching Arts of Utah) is as a collaborative effort with Be Well Utah and University of Utah Health to accomplish two goals:

  1. to teach people how to cook "traditional" Pacific Island dishes.
  2. to provide healthier options for some of the ingredients in recipes frequently used by Pacific Islanders.

Ingredients

Chicken

  • 1 lb Chicken
  • 1½ C canola oil for frying

Sauce

  • 1 thumb-size Ginger, grated
  • 1 clove Garlic, minced
  • 1/2 tsp Salt
  • 4 tsp Sugar
  • 1/2 tsp Mirin wine (sake)
  • 1/2 tsp Vinegar
  • 1 tsp Sesame oil
  • 1/2 tsp Oyster sauce

Flour Mixture

  • 1/2 C Flour
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Cooking Instructions

Mix all ingredients for sauce. Cut slits in chicken and let chicken sit in sauce for one day. Roll in flour mixture and fry.
